Zanzibar puts kitesurfing on a reef-protected turquoise lagoon with the hotels planted directly on the sand. Paje rides the Kusi trades from June to October and the Kaskazi from December to mid-March, in water that never leaves the 25 to 28 degree band. Low tide empties the lagoon into a walkable flat; high tide fills it back to a riding pool — and the spice tours, Stone Town and the dhow trips handle the rest of the week.
