The institution of the dam: Natural High is both the beach club (restaurant, showers, lockers, surf shop, test centre — open every day of the year) and the VDWS kite school that has taught more than ten thousand students since 2003. The trick up its sleeve: beginner lessons run on De Ooster, a naturally shallow sandbank off the coast reached by boat — flat, waist-deep, nobody downwind.
